FNSI reminder and prize, plus a yummy EASY recipe to try….

I did promise I’d get back to you all today with a prize for one of our lucky FNSI –ers tomorrow night and here it is….. 003 (Medium) Three gorgeous fat quarters which would be great for bindings, blocks and landscape designs…..the photo really doesn’t do them justice but trust me…..they’re schmick!!!!! One lucky participant in tomorrow night’s Sew In will be randomly picked out on Monday to win them…..you just have to make sure you’ve entered HERE and written a post on your blog about what you got done.  I’m pretty flexible though, and seeing as we have people from all over the world participating, as long as you join in and post between Friday and Sunday, you qualify (your time, wherever you are….that’s why I say I’m drawing a winner on Monday – my time…..it covers all time zones!). If you haven’t posted though, even if Mr RNG draws you out and you don’t have your blog post up, I’ll have to do a re-draw!!!! So make sure you share what you’ve been up to and visit all the other FNSIn-ers to see what they’ve been up to too!  Lots and lots of inspiration when you go visiting, that’s for sure!   I get soooo excited when FNSI comes around….can you tell????  LOL cupcake-border And so that you’ve got plenty of energy and yummies to keep you going tomorrow night, I thought I’d give you this easy recipe for an intensely yummy cake…..believe me, I’ve made it for the Monday sewing girls and they loved it!  007 (Medium) Easy Apple Cake (that’s it, on the plate above….left hand side!!) 006 (Medium)
  • 150g butter, melted
  • 2 cups stewed apples (fresh or tinned pie apples)  (I added 1/4 cup sultanas to the apples as they stewed plus a teaspoon of cinnamon…but that’s how I like it!….it works without too)
  • 1 cup sugar ( I used 1/2 cup plus a couple of tablespoons in the apples whilst they were stewing)
  • 2 eggs
  • 2 cups SR flour
  • 2 tspns baking powder
  • 2 tspns cinnamon
  • chopped nuts (optional)
  1. Place all ingredients into a bowl. Stir until well combined.
  2. Add nuts if desired.
  3. Pour mixture into a springform tin and bake for 40-45 minutes at 140 degrees celcius, or until cake springs back when touched.
  4. When cool, sprinkle with icing sugar and cut into squares.
How simple is that?????  If you don’t have any apples, try this cake with apricots and a little coconut in place of the cinnamon, or plums, or whatever fruit you have handy, fresh or tinned.  Delish!!!!! Sugary sweet hugs, xox :o) my signature

I think I just might make that. I will be sewing by myself but, I can always share later.
I need to confess, I am taking a day off so I can sew after I do some running around. I couldn't resist.

Oh, that cake sounds so yummy! I have everything except the springform pan. I really need to get one and try this. The fqs look great!
